Irish Kale Soup

 

irishkalesoup3When I’m not doing readings, you can usually find me in the kitchen whipping something up. These days I find myself on a mission to make recipes around the world. I love International food! Recently hubs and I were coming home from a trip when we stopped at Irish restaurant in Maryland for lunch. The soup of the day was Irish Kale. It was way too salty, but the taste was definitely under there somewhere. So you know I had to make it! It’s a very simple recipe, easy on the budget, and it just seems to work best on a Sunday afternoon!

 

  • 8-10 cups chicken or vegetable broth
  • 1 bunch of kale, shredded, stems discarded
  • 3-4 large red potatoes, peeled and diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • I pkg Aidells organic chicken and apple sausage , diced
  • salt and pepper to taste
  • small amount of olive oil

 

irishkalesoup1In a stock pot add the kale to your broth and bring to a boil, then simmer. You can also add potatoes from the start but I like to partially boil them in a separate pot first to keep that starchy foam out. I leave that up to you.

In a frying pan with a little olive oil, sauté your onion and sausage and garlic until browned. Then add the mixture to the soup pot. I specifically recommend Aidells not just for the healthier choice but the apple flavor does show up in the final product. It’s so good!

Add a few pinches of salt and pepper, bring back to a boil, simmer for 30 minutes, check the taste, add more salt of needed and you’re done!
